Thai Style Prawns & Vegetable Noodles

1 diakon, peeled and tops removed
1 large carrot, peeled and tops removed
1 zucchini, peeled and tops removed

Extra virgin olive oil
5 shallot, sliced
4 cloves garlic, sliced
1 inch knob ginger, sliced into matchsticks
1 red chilli, thinly sliced
Pinch salt
Pinch black pepper
5-8 curry leaves
10 prawns
Handful snow pea shoots
Handful spinach
1 bunch coriander, roughly chopped
1 bunch garlic chives, roughly chopped
1-2 tbsp sweet soy

Spiralize noodles using the Magimix Cook Expert. If you don’t have a Magimix use a spiralizer or peeler to form your noodles by hand.
Add oil to a pan over medium-high heat with shallots, garlic, ginger, chilli, salt, pepper, curry leaves, prawns, snow pea shoots, spinach, coriander and garlic chives. Sauté for a minutes, stirring occasionally.
Add noodles and sweet soy to the pan and stir through. Heat for a few minutes until noodles are warm.
