1 cup rice flour (and extra rice flour to dust the banana)
1 cup corn flour
2 cup full cream milk (or coconut milk)
2 egg yolks
1/2 tsp bicarbonate
1/4 cup brown sugar
4 ripe bananas
Rice Bran oil for deep frying
In a bowl, whisk together the corn flour, rice flour, brown sugar, bicarb soda and egg yolks. Slowly pour in the milk as you stir.
Coat the bananas in rice flour and then dip in the batter and deep fry in a frying pan with the rice bran oil until they’re golden brown.
