Texan Style Chicken Marylands

4 large chicken marylands

Salt & pepper


Texan Style Marinade 

1 bunch coriander

1 bunch spring onions

1 tbsp smoked paprika 

1 tbsp dried ginger

5 cloves garlic

1 white onion, chopped 

4 red Thai chillies

1-inch knob ginger, peeled and chopped

½ red capsicum

½ green capsicum 

1 lemon, juiced 

3 tbsp sherry vinegar

3 tbsp red wine 

1 tbsp light soy 

¼ cup extra virgin olive oil


Preheat the oven to 180C. Line a baking tray with baking paper. 

To make the marinade, combine all the ingredients in a food processor and pulse to form a paste.

Place the chicken in the prepared baking tray. Season the marylands with a generous amount of salt and pepper. Pour the marinade over the chicken, use a spoon to ensure it’s all coated. 

Bake in the preheated oven for 35 minutes or until the chicken is tender.
