Texan Duck Fat Biscuit (Biscuit N’ Gravy)


2 cups self raising flour, plus extra for dusting

2 tbsp. caster sugar

60g duck fat

175ml ½ cream ½ milk

12 eggs

Sausage gravy, to serve

Sausages, to serve

Eggs, to serve

Butter, for frying


Preheat oven 200C. Mix flour and sugar in a bowl and a pinch of salt, rub in the duck fat until it fully until the consistency of breadcrumbs. Make a well in the centre.

Add milk and cream. Mix gently, until it comes together. On a floured surface pat out a 2 to 3 cm thick circle, cut into quarters, transfer to baking paper and shape into circles. Bake on a tray lined with baking paper, until golden 12 to 15 mins. Cool briefly, split in half and arrange on plate.

Serve with fried eggs, bacon, sausages and gravy.
