Tempeh, Bacon and Cheese Burgers


4 soft burger buns

4 prosciutto slices
Cheese (Monterey Jack)

Burger mix
1 packet tempeh steak, diced finely
2 rashers bacon, diced finely
500g beef mince
¼ cup parsley, chopped
¼ cup thyme, chopped
1 tbsp mustard
1 tbsp BBQ sauce
Salt and pepper

2 tomatoes, sliced
Handful iceberg lettuce, shredded

Fry the prosciutto in a hot pan until crispy on each side. Set aside.

To make the burger mix, combine bacon, tempeh, mince, parsley, thyme, mustard, BBQ sauce, salt and pepper. Form the mixture into patties. Cook in a hot pan on once side and then turn the patty over and place a slice of cheese on the patties to melt while cooking the other side.

On well buttered buns, assemble mustard, sliced tomatoes, lettuce, the cooked patties, crispy prosciutto, top with the bun lid, place a skewer through a pickle and the burger to hold it in place.
