Sweet and Sticky Chicken Wings

Serves 6
Time 40 minutes


1 ½ kg chicken wings, tips removed 



3 tbsp sambal oelek 

1 tbsp sesame oil 

2 tbsp light soy sauce

1 bottle plum sauce

1 knob ginger, peeled and sliced into matchsticks

1 red chilli, sliced

4 cloves garlic, roughly chopped

1 bunch coriander 

4 spring onions 

1 tbsp chilli flakes

1 lime, juice, quarter lime skin

2 tbsp extra virgin olive oil 

Salt & pepper


To garnish

3 spring onions, sliced


Preheat the oven to 200C.

In a large bowl or tray toss chicken wings through marinade, add quartered limes to the bowl.

Pour onto a tray lined with baking paper and cook in the oven for 25-30 minutes or until caramelised and the meat comes off the bone.  

Pile on a large dish and garnish with sliced spring onions.
