Sweet & Sour Chicken with Cashews


 500gms chicken breast

1 clove garlic, crushed

1 tbls ginger, crushed

1 cup corn flour

1 cup egg white

100 mls white/cider vinegar



Chang’s light soy

Rice bran oil for frying


1 red onion/shallots

4 cloves garlic

1 knob ginger

2 red capsicum

½ ripe pineapple

1 cup toasted cashew

1 bunch spring onion

1 bunch coriander

rice wine vinegar

¼ cup brown sugar

corn flour


Slice chicken

Marinate in vinegar, soy, ginger & garlic

Coat with corn flour the egg whites

Fry & stand aside

Sweat all other ingredients, add chicken

Thicken with corn flour


Serve with steamed rice
