1 sweet potato, diced
1 onion, chopped
2 cloves garlic
2 slices thick cut bacon, diced
2 sausages breakfast or Chorizo, cut into rounds
extra virgin olive oil for frying
½ bunch parsley, chopped
2 spring onions, chopped
In a pan or medium heat, put plenty of olive oil and add the diced sweet potato.
Then add the sausage and bacon to the pan and stir.
Lightly season with salt and pepper, and add the onion and garlic, stir. Allow to crisp up and cook for a few minutes. Then add a little butter and stir together.
Lightly beat the eggs with the parsley and spring onions.
Add the egg and herb mixture and stir through until cooked through.
