Sweet Fillo Pastry with Pistachio, Figs and Honey Glaze


1 pkt fillo pastry

1 pkt kataifi pastry

8 dried figs

1 cup seedless dry dates

1/2 cup almonds

1/2 cup pistachio nuts

1/2 cup almond meal

1 cup sesame seeds

500gms honey

200mL rosewater

sugar syrup (1 cup sugar and 1 cup water and 1/4 cup honey boiled together)

250gm butter, melted


Put the figs, dates, almonds, pistachios, almond meal, honey, rosewater and 1 cup of sugar syrup in a food processor and blitz until it becomes a smooth paste. Add more sugar syrup if it isn’t pasty enough.

In a baking dish, put down 2 layers of fillo pastry, brushing on the melted butter between each layer. Apply a layer of the paste onto the fillo pastry and then add another 2 layers of fillo pastry and apply the rest of the paste on top.

Put a thick layer of kataifi pastry on top and brush with enough butter to soak through the kataifi. Bake in the oven at 180C for 30-45min, until the pastry is golden.
