Sweet and Sour Crocodile


500g crocodile, cut into small pieces

corn flour, for coating

egg white, for coating

oil, for frying

3 cloves garlic, finely chopped

1 knob ginger, finely chopped

½ onion, julienned

1 red chilli, sliced

1 red capsicum, chopped

¼ pineapple, diced

4 spring onions, chopped

¼ cup coriander, chopped

¼ cup honey

¼ cup vinegar

3 tbsp. soy sauce

sesame seeds, to garnish

fried shallots, to garnish

steamed green rice, to serve


Dust the crocodile meat in corn flour and then dip in egg white. On a low heat, carefully shallow fry the meat until golden brown.

In a hot pan, fry the onion, garlic and ginger. Add the chilli and capsicum and stir for a few minutes. Add the pineapple, spring onion, coriander, honey, vinegar, soy sauce and stir together.

Toss the cooked crocodile through the sauce and serve with rice, and garnish with sesame seeds and fried shallots.
