Sushi Rice Burger

Beef patties:
400g beef mince
2 tbsp soy sauce
3 spring onions, sliced
1 tbsp extra virgin olive oil

Rice cakes:
2 cups sushi rice
2 tbsp sushi vinegar
1 tbsp sake
3 tbsp Japanese seasoning powder (Furikake)
1 nori sheet, finely shredded

1 tomato, diced
½ cucumber, diced
1 tbsp pickled daikon, diced
1 tsp pickled ginger
2 tbsp Kewpie mayonnaise
1 tsp wasabi

To serve:
Cos lettuce leaves


Rinse the sushi rice under cold water until the water runs clear. Place the rice in a pot with 2 ½ cups cold water, bring it up to the boil, then reduce the heat to low and cover with a lid. Cook for approximately 15-20 minutes, then turn off the heat but leave the lid on for a further 15-20 minutes to allow it to cook completely.

To make the patties, combine the mince, soy sauce and spring onions in a large bowl. Season with salt and pepper then mix together with your hands. Form into golfball sized portions then flatten out into patties using an egg ring.

In a large frypan, heat 1 tbsp extra virgin olive oil and add the patties. Fry for a few minutes on each side over medium heat until cooked through.

Tip the cooked rice onto a wooden board and pour over the sushi vinegar, sake, seasoning powder and nori, and mix everything together. Once combined, press the seasoned rice into egg rings to create a patty-shape. Set aside to cool.

In a small bowl, combine all of the dressing ingredients and set aside.

Take a nori sheet the same width as the burger patty and rice cake, and place a rice cake at one end with the burger patty on top, followed by a cos lettuce leaf and some of the dressing. Place another rice cake on top and wrap up in the nori sheet. Repeat with the remaining rice and beef patties.
