3 tbsp coconut oil
2 tbsp peanut butter
3 tbsp maple syrup
1 ½ cups rolled oats
¾ cup fresh strawberries, finely diced
Preheat the oven to 180°C.
Line a baking tray with baking paper.
In a medium saucepan on low heat melt the coconut oil.
Add the peanut butter and maple syrup. Stir until all the ingredients have mixed together.
Pour this mixture into a large bowl. Add the oats and mix well.
Fold in strawberries and a pinch of salt then transfer mixture to the baking tray, making sure to press down the mixture with the back of a spoon.
Bake for 15 minutes until the edges are just starting to brown.
Allow to cool and put in the fridge for 30 minutes before slicing into squares to serve.
