500g of green prawns, remove shell (apart from the tail) and devein.
2 tbsp. rice bran oil
2 garlic cloves, chopped
2 bunches of garlic chives
2 tbsp. tamari soy sauce
1 tbsp. mirin
1 tsp sesame oil
½ packet soba noodles
Heat a saucepan of water, until boiled. Add noodles as per packet instructions.
Heat a wok until smoking, then add the vegetable oil. Add the garlic, toss in the prawns and chives and stir-fry until the chives start to wilt. Add the soy and mirin, with a little sesame oil and toss until fragrant.
Add noodles to wok, then stir and serve. Top with coriander to serve.
