1 x 250g packet coconut rice
1 tbsp extra virgin olive oil
1 bunch asparagus, chopped in half
1 bunch broccolini, chopped in half – reserve the stems and use them – crunchy, delicious and count in your veggie intake!
Generous handful of green beans, top and tailed
1 tbsp soy sauce
2 garlic cloves, minced
1 tsp grated ginger
1 tbsp fresh lime juice
1 tbsp rice vinegar
2 tbsp water
1 tsp honey
In a skillet or wok, heat olive oil and toss in all the veggies and season. Toss for 4-5 minutes.
In a bowl combine the dressing ingredients and whisk together.
After 5 minutes remove veggies from heat – in a bowl divide rice, top with veggies then spoon dressing over and a sprinkle of sesame seeds and some herbs.
