Steamed Italian Fish

Ingredients

2 x 150g Barramundi fillets

4 tomatoes, diced

1 handful olives, pitted

1 handful basil

2 garlic cloves

½ cup char-grilled capsicum cut in thin strips

1 tbsp preserved lemon, julienned

½ cup each of red and white quinoa, cooked

Method

Steam Barramundi fillets, tomatoes, olives, basil, garlic, capsicum and lemon together in a bowl in a steamer basket. Serve with red and white quinoa.
