1½ cup all-purpose flour
1 tsp baking powder
Salt & pepper
½ tsp dried oregano
¼ tsp paprika
1 cup water
½ cup spring onion, chopped
4 tbsp grated carrots
3 tbsp coriander, chopped
2 garlic cloves, minced
2 tbsp extra virgin olive oil
1 bunch broccolini
In a bowl combine the dry ingredients.
Add the egg and water and mix into a runny batter.
Add the spring onion, carrots, coriander, garlic and some extra virgin olive oil.
Mix well and let it sit for 10 minutes.
In a non-stick pan, add the batter in batches and fry for 2 minutes on each side.
Repeat the process with all the batter.
Steam broccolini for 3-5 minutes or until warm and tender. Serve on a large platter with a drizzle of extra virgin olive oil, a pinch of salt and cracked black pepper.
