Ingredients
Super Bowl
1 carrot, spiralized
1 zucchini, spiralized
1 beetroot, grated
⅓ cup quinoa, cooked
¼ cup black beans
⅓ cup edamame beans
2 radishes, thinly sliced
½ tsp black sesame seeds
½ avocado, thinly sliced
1 tbsp sauerkraut
Rosie’s super turmeric-tahini dressing
¼ cup tahini
¼ cup water
Juice of ½ lemon
1 tbsp maple syrup
1 ½ tsp liquid aminos (or soy sauce if unavailable)
½ tsp turmeric
¼ tsp ground ginger
Method
Arrange all of the salad ingredients in a bowl.
In a jug, whisk all ingredients for your dressing together until combined. Drizzle over your super bowl to serve.
