5 slices of wholegrain bread
1 tbsp. of olive oil
2 tsp. soy sauce
6 cooked prawns, peeled and sliced through the middle length ways
1 avocado, pip and skin removed and cut in long slices
1 jalapeno, finely chopped
Scoop flesh of avocado into a large bowl, add soy, lemon & lime zest, lime juice, prawns and half the jalapeno. Set aside.
Toast bread in oven at 160C for 5 – 10 minutes or until golden.
Spread mixture on toast, sprinkle over the rest of the jalapeno and a spring of coriander to garnish.
