2 cups cashews, soaked in 2 cups of water overnight
1 long green chilli, chopped
¼ cup of spring onion
2 cups of green rice, cooked
2 tbsp. cup dulse flakes, rinsed
2 tbsp. lemon juice
1-2 very ripe avocado
2 lebanese cucumber, cut into thin strips
4-8 raw nori sheets, you can use 2 per roll if it gets too soggy
To serve: tamari soy sauce, wasabi and pickled ginger
In a food processor blend the cashew, tamari, wasabi and chilli to make a paste. Pour into a mixing bowl and add the brown rice, dulse, and lemon juice, gently mix.
Spread the paste over raw nori to about 1cm thickness along the bottom of the sheet. Then place the green rice on top, spring onion, avocado, cucumber and pickled ginger and roll it carefully from the bottom or use a maki roller if you have one.
Serve with a little mix tamari soy sauce and wasabi and pickled ginger. Gently cut in half and enjoy!
