Spiced Beef Flatbread (Khima Chapati)



600g plain flour, plus more for rolling

1 egg, whisked

500g plain yoghurt

½ tsp. salt, plus more to taste

2 tbsp. melted ghee


Spiced Beef

½ cup melted ghee

250g beef mince

½ red onion, finely chopped

1 knob ginger, minced

2 cloves garlic, minced

1 pinch chilli flakes

1 pinch dried mint

1 tsp. cumin seeds, cracked

2 tsp. garam masala

1 red chilli, chopped finely

1 bunch coriander

salt and pepper


In a hot pan, heat the ghee and add the onion, garlic and ginger. Add dried mint, chilli flakes, cumin seeds, garam masala, red chilli, salt and pepper. Brown the mince into the pan, then add the coriander. Stir through and place the mixture aside to cool.

To make the dough, put the plain flour into a mixing bowl, add the yoghurt into the middle and with a wooden spoon make a well in the centre. Add the egg into the middle and gently stir it to combine the dough ingredients together.

Roll it into a ball on a clean bench with a little extra flour on it so it doesn’t stick. Then cut the dough into 6 pieces and roll them into smaller balls. Drizzle a little ghee, cover with cling film and rest for 20 minutes.

If moist after resting, dust the bench again and roll the balls into a flat round shape. put the cooled mixture into the centre of the pastry and fold the sides of the pastry over the mixture to cover it completely.

Fry the pastries for 4-5 minutes on each side in a hot pan with a little ghee until cooked through.
