Ingredients
1 cup spelt flour
1 cup rolled oats
1 cup desiccated coconut
1 tsp vanilla extract
Pinch salt
¼ cup honey
½ cup grated apples
½ cup coconut oil
1 tsp bi-carb soda
Method
Preheat oven to 180°C
In a large mixing bowl, combine flour, oats, salt, coconut, honey, apple, bi-carb soda, vanilla and melted coconut oil. Add more spelt flour if the consistency is too wet.
Take 1 tbsp of dough and roll into a ball, and repeat for entire mixture. Arrange balls on a greased baking tray.
Bake for 12-15 minutes until golden. Let cool for 5 minutes.
