Special Fried Rice with Chicken


2 chicken breast poached in soy and ginger, sliced

4 cups cooked jasmine rice

1 onion, diced

3 cloves garlic, crushed

1 knob ginger, sliced

1 red capsicum, diced

1 bunch spring onion, diced

½ bunch coriander

2 fresh chili, sliced

½ cup frozen shrimp

3 eggs

Soy sauce, low sodium

3 rashes bacon, diced

½ cup peas, frozen are ok

½ cup broccoli, cut into small trees

4 button mushrooms, sliced

4 shittake mushrooms, sliced

2 shallots, sliced

1 cup bean sprouts,

1 carrot, cut into rounds

1 cup Chinese cabbage, shredded

Deep fried shallots to taste and garnish



In a bowl whisk soy and eggs together. Pour into hot fry pan, fry the eggs and soy for 1 min.

Fry garlic, shallots, ginger, chillies, bacon, capsicum, carrot, mushrooms, peas, shrimp, broccoli, cabbage, jasmine rice, chicken and finish with beans. Add some soy sauce, tamari and toss all ingredients together. Top with bean sprouts, deep fried shallots, coriander and egg.
