South African Biltong

Serves 2
Time 20 minutes plus marinate overnight


700g flank steak
¼ cup brown sugar
1 tbsp ground coriander seeds
1 tbsp garam masala
1 tbsp fish sauce
1 tbsp thick soy or kecap manis
3 tbsp soya sauce
1 knob ginger, grated
2 cloves garlic, grated
½ bunch coriander, chopped
pinch of salt
twist of cracked black pepper


Preheat oven to 140C.

Slice the beef into thin strips and mix together with the marinade.

Marinade overnight.

Arrange on rack over a lined tray.

Bake in the oven at 140C for 1.5-2 hours.
