Sourdough Garden Salad with Lemon & Lime Dressing

Serves 4
Time 15 minutes


2 slices day-old sourdough
1 tsp extra virgin olive oil
1 clove garlic
1 cos lettuce, shredded
2 tomatoes, quartered
1 medium cucumber, diced
2 tbsp pepitas, toasted
2 tbsp sunflower seeds, toasted
¼ cup pine nuts, toasted

Juice of 1 lemon
Juice of 2 limes
2 tsp honey
½ cup plain Greek yoghurt
2 tbsp extra virgin olive oil
Salt and pepper, to taste


Combine all of the dressing ingredients in a large salad bowl and whisk to combine.

Toast the sourdough on both sides in a griddle pan with a drizzle of olive oil. Rub the toast all over with the peeled garlic clove, then cut into large squares.

Add all of the salad ingredients to the dressing and toss to coat.
