Som Dam (green pawpaw)


1 pawpaw, green

¼ cup peanuts

1 – 2 birds-eye chili, chopped

2 garlic cloves, chopped

2 tbsp dried shrimp

1 tbsp white palm sugar, grated

1 tomato, cut into wedges

1 tbsp fish sauce

2 tbsp lime juice

½ cup coriander leaves

1 cup bean sprouts



Peel, seed and shred the papaya using a mandolin or in a food processor. Set aside. In a mortar and pestle or processor, lightly pound together the peanuts, chili, garlic and shrimp. Now add the rest of the ingredients (apart from the coriander and bean sprouts) and pound gently again to combine all the ingredients. Finally, stir through the coriander and sprouts. Serve with a bowl of organic brown rice.
