125g spelt fettuccini or spaghetti
175 – 200g smoked trout, roughly chopped
1 tbsp. lemon zest
1 small bunch or half a bunch of flat leaf parsley, finely chopped
2 tbsp. EVO oil
1 garlic clove, crushed
Sea salt and pepper to taste
Fill a large saucepan with water and bring to the boil. Place the pasta into to boiling water and cooked till al dente.
Once cooked drain the water and toss the pasta with the remaining ingredients.
Season to taste.
