Smoked Tofu and Veggie Skewers


1 packet smoked tofu, cut into 3cm cubes

1 capsicum, cut into cubes

1 zucchini, thickly sliced

4 tbsp tamari

1 tsp fresh ginger, finely grated

2 tsp sesame oil           

1 tbsp mirin                       

1 handful of coriander leaves, to garnish



Soak bamboo skewers in water for 5 min while preparing the vegetables, this will stop them burning. Heat fry pan or BBQ. Meanwhile to prepare skewers alternate between the tofu, capsicum and zucchini until it covers ¾ of the skewer. In a small bowl mix tamari, sesame and ginger. Marinate in ¾ of the dressing. Drizzle olive oil over the skewers then place in your pan or on the BBQ, cook for 1 min then turn, continue turning until each side is evenly cooked. Place the cooked veggie skewers on a large plate and evenly pour over the dressing, garnish with coriander leaves and serve.
