1 smoked chicken breast
2 cups watercress sprigs, roughly chopped
3 tbls flat leaf parsley, roughly chopped
juice ½ lemon
freshly ground black pepper
2 extra tasty cheese slices
Finely chop or slice the smoked chicken, watercress sprigs, parsley and dill and combine in a small bowl. Add the lemon juice, salt and pepper and a tablespoon of mayonnaise and mix together well.
Butter two slices of white bread and one slice of wholemeal bread and place in a row on a chopping board (with wholemeal bread in middle).
Spread a thick layer of the mix onto two slices of bread (one white and one wholemeal) and place one slice of tasty cheese on top of the wholemeal bread. Now place the wholemeal bread (middle layer) on top of the white bread (bottom layer). Place the final slice of white bread on top to complete the triple-decker sandwich.
To create ribbon style sandwiches, cut away the crusts and slice the triple-decker sandwich length ways into three equal fingers.
