Ingredients
4 Chicken Breasts
Spice cure mix
1 cup Brown Sugar
4 tbsp Murray River Salt
2 tbsp Smoked paprika
1 tbsp dried chilli
2 tbsp fennel seed
½ cup Chopped coriander
Method
Flatten chicken
Mix the spices together and spread the cure over the chicken.
Cure the chicken for 1 – 1 ½ hour, covered with cling film in the fridge.
Wash off the cure.
Smoke in the BBQ with the lid for 15-20 minutes or until chicken is cooked.
