Smashed Avocado


1 avocado, skin and seed removed, roughly mashed

4 tbsp. feta cheese

1/2 tsp. lemon zest

2 tsp. lemon juice

7 red & gold perino tomatoes

1 tsp. fresh chilli

4 slices of grainy bread, toasted

Extra virgin olive oil for drizzling

Micro herbs



In a bowl, roughly mix together all ingredients apart from the toast. Spoon the avocado mash onto the toast and serve with micro herbs and a drizzle of olive oil.
