Hot Chilli Chicken Drumsticks

12 chicken legs
1 tbsp smoked paprika
1 tsp whole peppercorns
1 tsp turmeric
5 cloves
4 cardamom pods
6 dried chillies
½ garlic cloves, crushed
1 long red chilli, roughly chopped
1 long green chilli, roughly chopped
1 large knob of ginger, roughly chopped
½ white onion, finely diced
2 tbsp smoked paprika
1 cup stock
1 cup passata
½ bunch coriander
Salt and pepper


Grind the peppercorns, cloves, cardamom and dried chilli in a mortar and pestle. Season the chicken legs and sprinkle with smoked paprika. Add to a pan with extra virgin olive oil and brown. Transfer to a pressure cooker.

In the pan, add the chilli, garlic, onion, ginger, coriander paprika, turmeric, passata, stock and ground spices and bring up to temperature. Transfer everything from the pan to the pressure cooker, covering the chicken and cook for 20 – 25 minutes.
