2kg pork short ribs
Salt and pepper, to taste
1 brown onion, diced
1 long green chilli, finely chopped
1 long red chilli, finely chopped
1 jalapeño or habanero chilli, finely chopped
4 cloves garlic, grated
¼ cup brown sugar
2 tbsp habanero hot sauce (optional)
1 tbsp ancho chilli sauce
1 tbsp smoked paprika
¾ cup maple syrup
1 bunch coriander, chopped
500ml apple cider
Preheat oven to 160°C.
Place the pork ribs in a rectangular baking dish.
In a bowl, combine the onion, chillies, garlic, brown sugar, habanero hot sauce, ancho chilli sauce, paprika, maple syrup and coriander. Pour mixture over the pork ribs and spread evenly. Season with salt and pepper and pour the apple cider around the edges.
Place pork in the oven for 2 hours.
