1 avocado, skin and pip removed, mashed
¼ cup natural yoghurt
1 tsp. lemon zest
1 tsp. lemon juice
2 tbsp. fresh dill leaves, chopped
8 thick slices multigrain bread (toasted optional)
12 slices smoked salmon
1 cup rocket, stem removed
2 large tomato, sliced
In a small bowl, combine the yoghurt lemon zest, lemon juice, and dill. Spread the lemon yoghurt over 1 side of each slice of bread and on the other slice of bread spread the avocado.
Arrange the 3 slices of smoke salmon over 4 slices of the bread follow by a ¼ cup of rocket and couple of sliced of tomato
Cover with remaining slices of bread, lemon yoghurt side down.
Arrange the sandwiches on a platter and serve.
