250 gms pasta shells
1 chorizo sausage, sliced
½ head broccoli, florets removed, sliced
1 long red chilli, sliced
10 garlic cloves, peeled and crushed
½ red onion, sliced
1 bunch parsley, roughly chopped
2 cups rocket, roughly chopped
2 tbsp. olive oil
1 lemonsalt & pepper
Cook pasta as per pack instructions.
One minute before pasta is cooked, add the broccoli florets to the boiling pasta water.
Drain and set aside.
In a pan over a medium heat, add olive oil, onion and chorizo.
Cook for one minute until onion begins to become translucent.
Add garlic and chilli. Season to taste.
Cook for a further five minutes or until chorizo is nicely browned.
Stir through parsley and rocket and add the lemon zest.
Remove from heat, stir through pasta.
Serve with shaved parmesan on top.
