Sesame & Rice Cracker Crumbed Chicken Bites

Serves 4 as a snack
Time 15 minutes


3 x chicken breasts, cut into bite sized pieces

½ cup natural yoghurt

1 packet plain rice crackers
2 tsp sesame seeds
¼ cup nori sheets, shredded
1 small packet (about 2 tsp) Japanese sushi seasoning

Dipping Sauce
1 long red chilli, deseeded, diced finely
1 tbsp coriander, roughly chopped
2 spring onions, green part only, chopped finely
1 tbsp sesame seeds
¼ cup black vinegar
¼ tsp sesame oil
¼ cup soy sauce


Preheat the oven to 180°C.

Blend the rice crackers, Japanese seasoning, sesame seeds and nori sheets until a crumb forms.

Coat the chicken pieces in yoghurt and then the crumb. Place it on a lined baking tray and repeat the process.

Put the baking tray into the oven for 180°C for 10-15 minutes until cooked through and golden.

Combine all of the dipping sauce ingredients in a small bowl.

Serve the chicken pieces with the dipping sauce and enjoy.
