chicken breast, poached, chopped
Olive oil spray
24 wonton wrappers, white
2 tablespoons soy sauce
2 tablespoons mayonnaise
½ cup thinly sliced snow peas
½ cup shredded carrot
2 tbsp thinly spring onions
2 tablespoons chopped basil coriander
1 tbsp sesame seeds, toasted
dill, to garnish
Lay wonton wrappers on board, use a cookie cutter to cut out rounds.
Lightly grease a mini muffin tin with olive oil spray.
Put wonton rounds in moulds and place a matching mini muffin tray on top.
Transfer to a preheated 180C oven for 10 minutes or until wonton wrappers are cooked.
Allow to cool and remove from moulds.
For the fillings, in a large mixing bowl, combine shredded chicken, sliced snow peas, basil, sesame seeds, mayonnaise, salt, carrot and spring onions.
Just before serving, spoon mixture into wonton cups. Garnish with sprigs of dill.
