Ingredients
5 cups of water
1 cup of coconut palm sugar
½ cup of honey
slice of lemon peel
3 sticks of cinnamon
2 – 3 cloves, whole
2 cups of semolina, coarse grind
1 cup of safflower oil
¼ cup of walnuts, crushed
¼ cup of pine nuts
¼ cup of golden raisins
1 tbsp agave
rind from one lemon
½ cup passion fruit pulp
Method
Method |
In a saucepan, add water, sugar, honey, lemon peel, cinnamon, and cloves and boil gently for 1 – 2 min. Add safflower oil and slowly add semolina whilst whisky through. Once thick, add raisins, pine nuts, water and stir. Add walnuts. Spoon onto plate and cover with passion fruit and agave. Garnish with lemon rind.
