Ingredients
1 cup almonds, blanched
1 orange, zest grated
1 tbsp sesame seeds, toasted
1 tsp thyme leaves
½ tsp sea salt
12 scallops in the shell
A few thyme sprigs
1 orange, peeled then cut into thin segments
2 tbsp tahini, hulled
1/3 cup fresh orange juice
½ pinch sea salt
1 garlic clove, crushed

Method
Blitz together the first five ingredients until it resembles coarse breadcrumbs. Place about 1tbls of this on top of each scallop then grill for a few minutes. Crumbs should be just slightly changing colour. Meanwhile whisk together the tahini, juice, salt and garlic. This should be quite thin, like pouring cream. Serve drizzled with a little tahini dressing and garnished with thyme leaves and an orange segment.
