Savoury Pancake with Avocado


1 egg, lightly beaten
1 zucchini, grated moisture squeezed out
½ bunch chives, finely chopped
⅓ cup VITASOY lite milk
½ cup buckwheat or chickpea flour
pinch baking powder
pinch salt
½ tbsp. olive oil
Avocado for serving


In a bowl whisk together the egg and soy milk, add flour, baking powder, chives, zucchini and salt, combine well.

Heat olive oil in a frying pan over medium heat, divide the mixture into two, add ½ the mixture to the pan to make 1 large pancake, cook on each side, repeat with remaining mixture.

Serve pancakes topped with sliced avocado.
