1.5 cups self-raising flour
1 tsp baking powder
2 spring onions, finely chopped
1/2 bunch chives, finely chopped
1/2 red capsicum, diced
1 zucchini, grated and excess liquid squeezed out
2 eggs, lightly beaten
1/2 cup milk
2 cups grated tasty cheese
Preheat oven to 180°C.
Grease a 24-hole mini muffin tin (or 2 12-hole tins).
Combine all ingredients in a bowl and mix well. Divide mixture evenly between the muffin holes.
Bake in the pre-heated oven for 12-15 minutes.
Leave to cool before eating.
