Sausage Nachos with Cheese Sauce

250g smokey bacon, diced
1 chorizo sausage, sliced

1 cup Monterey Jack, grated
1 cup mozzarella, grated
125g unsalted butter
½ red onion, diced
1 clove garlic, sliced
Salt to season
3 tbsp plain flour
500ml milk
Pepper, to season

1 packet plain corn chips

¼ red capsicum, diced
¼ yellow capsicum, diced
2 jalapeño peppers, diced
Pinch cumin
Pinch smoked paprika


Preheat the oven to 180°C.

Heat a non-stick frypan over medium-high heat and sauté the bacon and chorizo until crispy. Set aside.

To make the sauce, heat a pot over medium heat and melt half the butter with the onion and garlic. Season with a pinch of salt, and allow the onion and garlic to soften (about 2 minutes). Add the flour and stir until dissolved, then slowly add the milk, stirring as you go, until all combined.

Add all of the cheese, some cracked black pepper, and stir continuously until the cheese has melted. Turn off the heat.

Into a large oven-proof dish, layer half each of the corn chips, capsicum, jalapenos, paprika and cumin, then pour over half the chorizo and bacon and the pan juices. Repeat this process then pour all of the cheese sauce over the top

Place in the oven and cook for 10-15 minutes.

Serve with a light green salsa.
