Salt Bush Damper

Ingredients

900g self raising flour

160g unsalted butter, cold, cubed

1 tsp baking powder

1 tsp sugar

1 tsp salt

550ml milk

Method

Preheat oven to 180°C. In a food processor add the flour, butter, sugar, baking powder and salt and blend together. Pour the mixture into a bowl and add ¾ of the milk and start mixing and kneading the damper together. Add the rest of the milk as needed.

Place the sticky damper into a lined oven dish and sprinkle with a little extra flour. Cook for 35 minutes, until golden. When you tap it, it should sound hollow.
