Salsa Verde


1 cup mint leaves, finely chopped
1 cup basil, finely chopped
1 cup coriander leaves, finely chopped
2 spring onions, chopped
1 tbsp capers, chopped
4 dill pickles, diced
½ green olives, pitted and diced (or none)
½ tbsp apple cider or white wine vinegar
1 tbsp olive oil (or none)
1 – 2 garlic cloves, finely chopped (or none)
2 – 3 anchovies, chopped (or none)
Sea salt (or none)


In a large bowl mix everything together. Adjust seasoning to your liking.
