Salami Pizza Pie


3 cups plain flour
2 cloves garlic, chopped
4 eggs, whisked
¼ cup passata
2 cups shredded cheese
1 cup shredded ham
½ bunch basil
½ cup black olives
20 – 30 slices salami
5 anchovies, torn
¼ cup parmesan cheese, grated

Yeast Mix
1 tsp dry yeast
2 tbsp flour
2 tbsp water


Yeast Mix:
Combine all ingredients and leave in a warm place for 15 – 20 minutes.

To make the pizza dough, sift flour into a large mixing bowl. Make a well in the centre and add yeast mix. Pour in 1 to 1 and ½ cups of water or enough to form a smooth dough.

Turn out dough onto a floured board. Knead gently for 1 minute or until dough comes together. Return the dough back to the bowl and transfer to a warm place to prove for 40 minutes.

Roll out dough into a rough round. Drape over pie dish, pushing into the corners. Lay salami slices at the bottom of the pie. Sprinkle over a layer of cheese, ham and anchovy pieces. Add a few basil leaves, olives and garlic pieces. Add salami and repeat layering process until pie dish is almost full. Grate over parmesan cheese.

In a small bowl, whisk together eggs and passata.

Pour mixture over the pie.

Fold edges over the pie leaving a hole in the center for air to escape.

Transfer to a preheated 200C for 30 – 40 minutes or until pastry is golden brown and mixture is set.
