Sad Soup with Leftover Veggies

Serves 4
Time 1 hour


2 tbsp extra virgin olive oil
1 large brown onion, diced
1 stalk celery, diced
2 large carrots, diced
2 cups dry lentils
2L vegetable stock, warm
2 x 400g cans diced tomatoes
2 medium sweet potatoes, diced
Salt and pepper, to taste

2 cups kale, chopped
1 cup San Remo Alphabet pasta


Add all ingredients – except the kale and pasta – to a large saucepan over medium heat and stir.

Cover with a lid and cook on low for 45 minutes.

Add the kale and the pasta, cover again and cook for a further 5 minutes or so.
