Vodka Syrup
700g strawberries or mixed berries, hulled and cut in half
25g icing sugar
¼ tsp cinnamon
¼ vanilla bean
1 tbsp vodka
Berry Glaze
2 eggs
85g caster sugar
1 tbsp vodka
¼ vanilla bean
½ cup sour cream
Method
Method
Mix vodka syrup ingredients together in a bowl.
Using berry glaze ingredients, place eggs, sugar and vanilla bean in bain-marie. Whisk for 6-8 min until pale and fluffy. Fold in vodka and whisk for 2 min. Remove from heat and fold through sour cream. To serve, arrange fruit over four plates. Cover with sabayon and glaze under grill for 1 – 2 min until golden.
