Rocket and Mint Hommus


1 can of chick peas, no salt

1/4 cup tahini, hulled

¼ cup lime juice

1 cup mint leaves

1 cup rocket

1 tsp sea salt

½ tsp of cumin powder

1 tsp avocado oil

1 tsp sumac

Sea salt to taste

1 garlic clove, crushed (optional)

Mountain Bread to serve



In a blender or food processor, mix chickpeas, rocket, mint and tahini, cumin, lime juice, coriander and salt. Add olive oil to taste. Plate up and drizzle with avocado oil and sumac.

Serve with toasted Mountain Bread wedges.
