Roasted Kingfish with Sweet Potato Mash


2 Kingfish fillets

Sea salt and cracked pepper

1 tsp olive oil


Sweet Potato Mash

2 cups sweet potato, peeled

1 tbls soy milk

1 tsp olive oil

½ tsp white pepper, ground



Season the fish on both sides. Heat the oil in a pan then place the fish in, skin side down. Allow the skin to become a golden colour then turn. Cook for one minute on the second side. Place on an oven tray and bake at 180oC to finish off the cooking. About 10 minutes. 

Sweet Potato Mash
Steam your sweet potato until tender. Drain then blend with the other ingredients.
