Roasted Coconut and Fruit Salad

Ingredients

100g coconut slivers, shredded

½ cup of pawpaw

½ cup of blueberries

½ cup of mangoes

1 orange, cut into segments

Fruit salad dressing

2 ripe bananas

¼ cup of mint

½ tsp lemon and lime zest

½ a lemon juice

½ a lime juice

cointreau (optional)

Method

Pre-heat the oven to 180C and place the coconut in a baking tray and bake for 5 minutes or until golden brown.

In a food processor place the banana, zest, lemon juice, lime juice, mint and cointreau and process until smooth.

In a bowl gently mix through the pawpaw, blueberries, mangoes and orange segments.  Place the fruit mixture into individual bowls and pour them over the banana dressing.

Sprinkle coconut to finish and serve in decorative glasses.
