160g Primo pepper crusted roast pork slices
1 cup Gruyere, grated
½ cup sauerkraut
2 tbsp pickled jalapenos, finely chopped
5 cornichons, finely chopped
½ red onion, finely diced
1 tbsp thyme, finely chopped
1 tbsp chives, finely chopped
1 tbsp Dijon mustard
2-3 panini rolls
In a bowl, combine the gruyere, sauerkraut, jalapenos, cornichons, red onion, thyme, chives and Dijon and stir until combined.
Slice the paninis in half horizontally and butter the insides. Lay some pork slices on top of one slice, followed by the sauerkraut mixture and then place the other half of the panini on top.
Heat a sandwich press and place the paninis inside. Toast for 5-7 minutes until the bread is toasted and the cheese has melted.
